The evening will include specially prepared Garden Festival Feast by Noah Crowcroft with ingredients sourced from Victorian producers and growers, gin from Collingwood based maker Melbourne Gin Company, and a discussion between the chef, Catherine Velisha, Velisha Farms Managing Director and Jason Chongue, Creative Director of the Garden State Festival

The Menu

- Banh Khot - Crispy coconut cups with pork relish, poached prawn, and Yarra Valley smoked salmon roe

- Larb Hed - locally foraged mushrooms, spicy nuoc cham, roast rice powder, and iceberg cups

- Salt and pepper cauliflower with roast chilli dressing

- Vietnamese slaw with Imperial mandarin, herbs, and peanuts

- Smoked broccoli salad with almond dressing and coconut-pea purée

- Port Arlington mussels with yellow curry broth and taro chips

- Sri Lankan beetroot curry with coconut

- Eggplant and tofu Ma Po with Sichuan and spring onion

- Steamed jasmine rice with turmeric and lemongrass

- Pear cake with salted oat crumble and ginger ice cream
